Bavarian cream

Bavarian cream or Crème bavaroise is a classic dessert named after Bavaria, Germany.

Bavarian cream is similar to Crème anglaise. A true Bavarian cream is usually filled into a mold, chilled until firm, then turned out onto a serving plate. In America, it is not uncommon to serve Bavarian cream directly from the bowl it has been chilled in, similar to a French mousse. It may be served with a fruit sauce.

Bavarian cream can be used to fill elaborate charlottes or served as a dessert by itself. It is also used as a filling for doughnuts which may be called Berliners, Bismarks, Long Johns, or simply Bavarian Creams, which typically also feature chocolate icing.
