Jack Daniel's Racing (Also known as Perkins Engineering) is one of the most iconic teams in the V8 Championship. The team was founded by former F1 driver and ATCC legend Larry Perkins. While his team has collected three Bathurst wins, championship wins have often slipped away in the V8 Supercar era and the team has had to settle for a number of runner-up positions.

Lately, Perkins' cars have been having weird accidents at Bathurst. In 2004, Perkins' good friend and Steven Richards' father Jim Richards hit a kangaroo at the Cutting, and the lead Perkins car sustained critical damage.

In 2005, the lead car with Steve Richards and Paul Dumbrell had critical suspension damage and Dumbrell hit a barrier near the Cutting and the left front wheel was ripped off and bounced off another barrier and stuck the front windscreen of Craig Lowndes's Ford Falcon. Lowndes was un hurt but had to nurse the car back to the pits and had to get both front and rear windscreens cut out.

At the end of the 2005 season, long time sponsor Castrol announced that they were leaving the team. Spirit maker Jack Daniels replaced Castrol. The 2006 has been a season of highs and lows, with both Dumbrell and Richards scoring high finishes while Richards won the Western Australian round for the second time as in many years. The '06 season has also seen the Perkins team expand from 2 car to four cars with son Jack Perkins and Jack's Formula Ford rival and good friend Shane Price running in the Fujitsu Series, with Price and Perkins finishing 2nd (Price) and 3rd (Perkins).

At the end of the season, Dumbrell and Richards announced that they were leaving the team. Perkins and Price have been confirmed to drive in the "main game" Championship.

Price and Perkins both drove for Jack Daniels Racing in 2007 until Perkins was diagnosed with type 1 diabetes. Former HRT driver Todd Kelly has signed with Jack Daniels Racing for the 2008-2009 V8SC to drive in place of Perkins.
